Duck Breasts with Mandarin Marmalade

Duck Breasts with Mandarin Marmalade

Ingredients (serves 2):

  • 2 duck breasts with skin on
  • Salt and freshly ground pepper
  • 2 tbsp freshly squeezed orange juice, or freshly squeezed mandarin juice
  • 3 tbsp Bonne Maman Mandarin Marmalade
  • 1 tbsp olive oil

Preparation

Heat a heavy pan without any fat for a few minutes until very hot. Add the duck breasts, skin side down, and cook for a few minutes.

Cook for 5-6 minutes in a heavy pan on the stove until the skin is golden. Turn and transfer to a roasting tin and place in the centre of a pre-heated oven at 200°C (400°F). Continue cooking for about 10 minutes. Remove and rest on a warm dish.

While the duck is resting, place the juice and the marmalade in a pan. Heat gently until melted and stir in the oil, season to taste. Slice the duck breasts diagonally and place on warm plates and pour over the sauce. Serve with mixed rice and some lightly cooked green beans.
